Super savory oatmeal patties? That are gluten free and vegan? What is the craziness! Well, I’ll tell you! This weekend, I was given the chance to try a new gluten free, vegan “burger” mix, and I thought that I would do my Suz thing and make a copycat recipe. We’ll get to that in a minute, but how about a few things about my weekend!
This weekend was pretty low key, but there were some undeniably delicious highlights. As you know I do 😀
Friday night, Alex was working nights, so I had zoodles and the first round of my super savory oatmeal patties, which I crumbled on top. These cookies are crazy–they are the perfect patty texture, and they taste like savory TVP! Strange, but so good! We’ll get to them in a minute 😀
The next morning, it was off to Fleet Feet for the last long run of the Chicago Endurance Sports Winter Warriors season. It is so funny to think that the season is over, and that I’ve not run for any of it. Pretty bizarre, but I am so thankful to CES and the crew for keeping me in the fold and allowing me to continue to be a running coach, even if I couldn’t run. There were times during this season when I didn’t want to go because of my back, but at the same time, having CES there, knowing that I had friends who looked forward to seeing me, putting the trainees through their ab workouts and answering questions–the experience always turned my day around.
Also, it doesn’t hurt when one of the runners brings donut holes for everyone and another runner brings Stan’s Donuts for the coaches. And I get to be “in charge” of them 😀 Hey, I’m doing more cardio, gotta feed the monster, right?
The rest of that day, I hung out with Alex, went to the gym with him later on, and then we returned to one of favorite nearby restaurants, Doc B’s Fresh Kitchen. We split the guacamole, sweet potato chips, and crudite as well as an Internal Affair (our favorite cocktail), then I got my Black Tiger Shrimp Salad and Alex got the Spicy Thai Salmon Quinoa Bowl.
Not a crumb was left!
Speaking of the hunger monster, even with the huge dinner I had, I ate 2 snacks before bed and woke up at 3 with my mind turning (not in an anxious way, just in an “I have a lot of stuff going on way”) and my stomach growling. I gave up at 4 and had a breakfast while I watched the Australian Open (hey, if I have to be up that early) and worked on some Coach Suz Letter content (the new one comes out today!). I had another breakfast before Alex even woke up! But then we went to the gym and to another favorite spot, Meli Cafe, for brunch, where we demolished a Kiwi, Strawberry, Orange pressed juice, my usual GIGANTIC egg white scrambler, and Alex’s Jalapeno Breakfast Bowl.
Again. Not a crumb was left.

Super Savory Oatmeal Patties (Gluten Free, Vegan)
Kim’s Simple Meals Organic Homestyle Burgers are a unique vegan, gluten free oat-based mix that bring favorite burger flavors to anyone’s table! Shelf stable, all you have to do is add water. As I said, these savory oatmeal patties have a delightful, soft cookie like texture, but they taste distinctly savory and smokey. Great nutrition and easy to make, mix and bake them in bulk for your meal prep or freeze them! They would be perfect for spaghetti squash or zoodles (as I used them), crumbled over a salad or into a taco, or molded into a patty and served with toppings as burgers. I won’t lie, I had a few of them just plain!
- 1 1/2 c Gluten Free Old Fashioned Oats
- 1/2 c Chickpea Flour
- 1/4 c Yeast Flakes (or 1/8 cup Nutritional Yeast)
- 1/4 c Ground Flaxseed
- 1 tsp cocoa
- 1 t sea salt
- 1 T Garlic Powder
- 1 T Onion Powder
- 1/2 T Tomato Paste
- 1 1/2 T Tamari Paste
- 1 T Liquid Smoke (can Sub with GF Worchestershire or Liquid Aminos)
- 1 1/2 Cup Boiling Water
- Whisk together wet ingredients and dry ingredients in separate bowls. Add wet to dry, incorporate, and add up to 1/4 cup more water, if needed. Let sit and set. Scoop and form 4 patties or 8 cookies
- Heat oven to 350*F. Place cookies/burgers on a greased, lined baking sheet. Bake for 15-20 minutes, flipping after 10 minutes.
- Heat medium skillet or grill pan over medium heat. Coat pan with cooking spray and cook for 10 minutes, flipping after 5.
- Serve with toppings of choice!
