Piri Piri Spiced Turkey Burgers (Gluten, Dairy, Egg Free)

First, thank you all so much for your support regarding the RWCoverSearch (psst, you can vote everyday! go #437 #badassunicorn!) as well as my opening up about my health concerns in yesterday’s post. The pregnancy post is one that is a long time coming (even after last year’s post on the subject), but I’m still working on that one, and want to have another meeting with my fertility specialists before I open up about my plans in more specifics. I might go ahead with a mental health – related post related to it, but we’ll see. I’m trying to live in the here and now! AND NO MOM I”M NOT PREGNANT AND WON’T BE FOR A LONG TIME. (Which is part of the problem, lol).

When we were planning on grilling out last week, I got some ground turkey to make turkey burgers. I ended up doing salmon and sweet potatoes instead…

Piri Piri Spiced Turkey Burgers (Gluten and Dairy Free)

The Blue Apron meal that I made called for one of my favorite spice blends, Piri-Piri, which literally means “pepper-pepper” and is both a sauce as well as a type of chili (commonly also known as the bird’s eye chili) that is native to Africa and popular worldwide. I love it because it is a blend of all sort of chili and red pepper like spices with as much heat as you want it to have (especially if you make your own!).

Ingredients
  1. 1 tsp Cayenne Pepper
  2. 1 tsp Ground Cinnamon
  3. 1/2 tsp Ground Cardamom
  4. 1/2 tsp Dried Oregano
  5. 1 TBSP Smoked Paprika
  6. 1 tsp Ground Ginger
  7. 1 tsp Dried Lemon Peel
  8. 1 tsp Light Brown Sugar
Instructions
  1. Whisk all together

 I made two different versions of the burgers–one for Alex and one for me–but the spices were the same, and both were equally delicious (and yes, I tried them both, as did Alex, and he can vouch! But his was far bigger, so it needed more of a binder). I amped up the Piri Piri spices with a dried chili mix from Raw Spice Bar, and the result was absolutely perfect. To finish? Hummus, avocado, spinach, tomato, and my new Voodoo Honeydew Mild peppadew hot sauce from Black Angel Saucery made this a complete and utter winner.

Ingredients
  1. 4 gluten free burger buns of your choice
  2. 1 avocado, sliced
  3. 1 tomato, sliced
  4. Fresh spinach
  5. Gluten Free Hummus (I like Beet Scallion Hummus, or Spicy Red Pepper Hummus)
  6. Black Angel Saucery Voodoo Honeydew Mild Hot Sauce (SUZLYFE20 for 20% off!)
Burgers
  1. 2 TBSP Piri Piri Spice Blend
  2. 1 TBSP Raw Spice Bar Red Chili Blend (A blend of Ancho, de Arbol and other Chilis) or use more Piri Piri spice or smoked paprika)
  3. Salt
  4. 24 oz Extra Lean Ground Turkey
  5. 1/2 cup shredded zucchini
Instructions
  1. Mix all burger ingredients together (don't over mash), separate into 4 patties and let sit for at least 10 minutes.
  2. Prep other toppings and ingredients.
  3. Set grill to medium/medium-high.
  4. When at temp, spray with cooking spray, season the exterior of the patties with salt and pepper, then place on the grill or pan. Cook about 5 minutes on one side, flip to other side, cook about 3-5 more minutes. Burgers should be firm to pressure, but not rock hard. If necessary, put a lid over the burgers to "bake" them.
  5. Let sit for 3-4 minutes as people get their plates together, and enjoy!

Ingredients
  1. 4 Burger buns of choice

  6. 1/4 cup crushed crackers (about 8 saltines)
Instructions
  1. Crush the crackers in the packet (well, that's how I do it!)
  2. Mix all burger ingredients together (don't over mash), separate into 4 patties and let sit for at least 10 minutes.
  3. Prep other toppings and ingredients.
  4. Set grill to medium/medium-high.
  5. When at temp, spray with cooking spray, season the exterior of the patties with salt and pepper, then place on the grill or pan.  Served these puppies along side simply roasted plantains. Just sliced, placed on sprayed parchment paper and in a 375 oven for 25 minutes, turning once.
