This is not a “healthy” holiday recipe 😀 But, to be fair, it isn’t that bad for you, either. What it IS, however, is delicious, light, fluffy, sweet, tart, and just the right little pop of dessert after you have gone to town on just about everything else. Or, in addition to everything else, haha. But everyone will be asking for your cranberry cupcake recipe afterward, I can promise you that.

I made these as part of my Non-Traditional Traditional Thanksgiving Alex’s and my first year as a married couple and living in Chicago, and they were HUGE hits both with my family as well as the lucky coworkers that go to enjoy them!

These cranberry cupcakes are delicious, light, fluffy, sweet, tart, and just the right little pop of dessert after a big meal!

These cranberry cupcakes are delicious, light, fluffy, sweet, tart, and just the right little pop of dessert after a big meal!

You'll Need...

  • For the Cupcakes:
  • 1 ½ cups all purpose flour
  • ½ t baking powder
  • ½ t salt
  • ¼ t baking soda
  • 1/8-1/4 t of cardamom, cinnamon, and ginger (the magazine suggests fresh nutmeg)
  • 6 T unsalted butter, room temp
  • ¾ cup granulated sugar
  • 1 large egg, room temp
  • 1 t vanilla
  • ½ cup greek yogurt (Magazine used sour cream)
  • ½ cup homemade apple cranberry relish (recipe below, magazine says canned whole berry sauce, but pllllease)
  • 2 t lemon zest or apple cider vinegar (my addition)
  • 2 T dried cranberries, chopped (addition)
  • Quick Apple Cranberry Relish:
  • 1 cup fresh cranberries (Rough chop)
  • ½ cup fresh apple, chopped
  • ¼ t nutmeg and salt
  • ¼-1/2 t each clove, cinnamon, ginger
  • 1 T Apple cider vinegar
  • ½ cup water (or as needed)
  • 1/8-1/4 c maple syrup (as needed)
  • Frosting:
  • 2 sticks unsalted butter, room temp
  • 3 cups powdered/confectioners’ sugar
  • ¼ cup homemade cranberry relish (mag suggests the cranberry sauce again)
  • ½ t vanilla extract
  • Pinch of salt
  • Dried cranberries

Directions

  1. Cupcakes:
  2. Preheat oven to 350 F, line 12 cup muffin pan with paper liners
  3. In medium bowl, whisk flour, baking powder, baking soda, salt, and spices to combine
  4. In large bowl or stand mixer, beat the butter and granulated sugar at medium speed until creamy (creaming) (about 2 minutes). Add in egg and vanilla and beat until fluffy (asbout 3 more minutes)
  5. Reduce speed to low, add dry to creamed mixture in ½ cup increments, beat until just incorporated (about 1 minute, pull up paddle and scrape the sides). Add in yogurt and zest/apple cider vinegar and beat until light and fluffy (about 2 more minutes). Fold in some chopped dried cranberries, if desired.
  6. Divide batter among the muffin cups and bake until a toothpick removes cleanly (about 20-25 minutes, rotate pan halfway through). Let cool on a baking rack.
  7. For the Relish Filling:
  8. Combine all ingredients in small sauce pan
  9. Bring to boil, reduce to simmer for 10-20 minutes (depending on desired consistency
  10. Allow to sit and cool for about 5 minutes (in case it tightens up more than expected)
  11. Let sit in fridge overnight before use
  12. **If you want a straight cranberry relish, use 1 ½ cup cranberries and 2 t lemon zest
  13. Frosting:
  14. Beat butter and 1 cup confectioners’ sugar in stand mixer or large bowl on medium speed until combine (about 2 minutes), reduce speed to medium low and gradually add remaining sugar and beat until fluffy (about 2 minutes)
  15. Add cranberry relish, vanilla, and salt until combined on medium high.

  17. When everything is cool, top cupcakes with frosting!
  18. To Assemble:
  19. Use a spoon, a melon baller, or other scooper and remove about a ½ T from the top of the cake, fill with the cranberry relish, and then top with frosting!

I can’t recommend them more! I served these alongside mini bourbon pecan pies, chocolates, ice cream, and sparkling rose (nice and dry but a little bit of sweet).

We also served my Chipotle Turkey Pumpkin Cranberry Enchiladas, Jalapeno Cheddar Cornbread muffins, green beans with butternut squash, cranberries and a maple mustardo sauce, and apple cranberry relish.

It was my first year making the entirety of Thanksgiving, Alex’s and mine first married Thanksgiving, and our first Thanksgiving in Chicago. This year is obviously a bit different–I am fixing an easy Thanksgiving with my mom and my brother (turkey, mashed potatoes, butternut squash, green beans, croissants, and pies), and then Alex and I will celebrate Thanksgiving again when I return this weekend. I love turkey and all the flavors of Thanksgiving, so you know that I’m not complaining!
