This weekend was tough for me. Not going to lie, sugarcoat, or candy-paint it. But right now, I am trying to #takelemonsmakeapplesauce. Weekend and Injury Update
After being all optimistic and painting the picture of progress on Friday, I had a regression in my back that sent me into a bit of a downward spiral. Even to the point of emailing my specialist. I did write the email and then wait before sending crucial move. But I ended up not going to my coaching meeting because, quite honestly, I couldn’t handle it, both with regards to pain and the mental/emotional aspect. Alex got me out of the house to a new restaurant very close to us, and we had a fantastic meal that got me out of my cloud of doom and gloom for an hour.
I took it easy Saturday. Really easy. I think I took a total of 1000 steps. We went to brunch, and that was about it. I did bake Fit Body Bakery brownies (last day to win! Or use code SP15 for 15% off orders at FitBodyBakery.com) I made mine with pumpkin and zucchini and they are bomb. And then made zucchini fritters with the extra zucchini. #takelemonsmakeapplesauce
Sunday felt no different, back and pelvis wise. Actually worse. I don’t want to focus on it. Instead, I had dessert for lunch (those amazing Fit Body Bakery Brownies holy balls). I worked on a few recipes (about to share one!) and just tried to focus on gratitude for the things I CAN do.
Part of the reason that this injury is so hard for me to deal with is that, quite frankly, I feel a bit trapped, stuck, and scared. When I had the boot on this spring, I could still go for a walk, or get up and go do something–I just had to do it with the boot. But right now, my options are limited. I would be a lot better, frankly, if I hadn’t had those 48 hours when I was doing so much better! To have that type of progress and then to regress, and regress that much, well, it is like when Chicago gives us those perfect days in the spring and then sends us another month of cold, rain, or snow.
So I am just trying to focus on #takelemonsmakeapplesauce. Right now, my applesauce(s) are my recipes and my new coaching business!
Healthy Apple Pie Protein Mug Cake with Sunwarrior Classic Plus
As I mentioned on Friday, as I do my best to recover from my back/pelvis injury and make changes to my Crohn’s medications, I am paying particular attention to my nutrition and rebuilding from the inside out. You guys already know that I work quite hard on my nutrition–even my vacation eats weren’t that bad! Just maybe in excess, lol–I am always open to new opportunities for improvement!
Then, I used that applesauce to make apple muffins.
Now? I’m using those apples and applesauce to make apple pie. But, in typical Suz fashion, this isn’t your typical apple pie. This is Apple Pie. PLUS. Healthy, vegan, gluten free, protein and fiber rich, low in sugar and nonsense, easy to digest for EVERYONE apple pie. TOP THAT MARIE CALLENDERS.
I introduce to you my Healthy Apple Pie Mug Cake, which takes your standard, run of the mill apple pie and makes worthy of the epicness that is you. Plus, it tastes freaking awesome and even satisfies a heathen like me. But I must insist that you make it with Sunwarrior Classic Plus. I am loving it and feel that taking a proactive approach to my recovery via my work with the physical experts as well as my nutrition is going to serve me well.
- 1 scoop Sunwarrior Classic Plus Vanilla Protein Powder
- 2 tsp + 1 tsp Gluten Free Oats, divided
- 1/2 tsp Baking Powder
- 1/4 Apple, chopped or sliced
- 1 TBSP Apple Cider Vinegar
- 2 TBSP Homemade Applesauce (recipe on Suzlyfe.com)*
- 1 TBSP Unsweetened Vanilla Vegan Milk (I like almond)
- Either: 1 mashed date or fig or 1 TBSP Nut Butter (can also use egg white if no need to be vegan)
- 1 tsp Cinnamon
- 1/2 tsp Clove, Ginger, Nutmeg
- Pinch Salt (don't neglect this!!)
- Grease microwavable dish or ramekin.
- Mix spices, wet, and dry ingredients separately (reserve apples). Take 1 tsp of spice mixture and mix with 1 tsp of oats. Whisk other spices with dry ingredients.
- Add wet to dry.
- Spoon 1/2 of batter into ramekin, then layer majority of chopped apple and sprinkle with 1/2 of reserved spice and oat mixture. Layer rest of batter on top, then finish with remaining apples and spice-oat mixture.
- Cook in microwave for 1-2 minutes.
- Finish with a dash or two of cinnamon and a dollop of vegan whipped topping.
- *adjust amount of apple and applesauce to taste and texture preferences
