I don’t think that it is any surprise that I love guacamole. What is surprising is that I grew up not like avocados! Hated them, actually. But now? I think I’ve proven my love for guacamole, and I’ve also gotten pretty dang excellent at making it!
Something else that I love? Chicken sausage. Alex and I use chicken sausage all the time–breakfast, lunches, dinners, frozen or fresh. We all know that I have a sensitive stomach, so as much as I would love to have pork or even beef sausage, well, let’s just say that it doesn’t go well. But chicken sausages seem to go alright!
I always keep our freezer stocked with chicken sausages in a variety of flavors–a quick nuke in the microwave to thaw and then sear them in a pan or on a grill for a protein that is ready in minutes and beyond delicious.
My favorite brand of chicken sausage, far and away, is al fresco. Made with lean, skinless chicken meat, al fresco’s chicken sausage products contain 70% less fat and 30% less sodium than average pork sausage. Better yet, all of al fresco’s chicken sausage flavors are gluten-free and are packaged fully cooked (thus why they go from freezer to pan to my mouth in a jiffy!).Not only was al fresco the first brand I ever tried, they have been the most consistent in quality, flavor, and good nutrition, while also coming in amazing flavors that I love to experiment with for unexpectedly delicious flavor combos.
The newest flavor added to the al fresco line is Sweet & Smoky BBQ Chicken Sausage, and if you are a barbecue lover like me, you will dig this. The flavor profile is incredible balanced–you get the molasses of a sweeter barbecue sauce but that lovely savory, umami flavor as well, and a little bit of smokiness (for all of us who don’t have access to real grills!). We finished the package in two days!
Let’s get to my recipe! I thought a recipe that could be enjoyed al fresco would be appropriate, no? How about some
Sweet and Smoky BBQ Chicken Sausage Guacamole (Gluten Free)
Now it is time to get to the good stuff. When it is summer time (and the living is fine), I reach for chips and veggies and dips more so than ever. Thus why Alex and I have been making frequent stops at Gaslight for guac and hummus, and why I made sure to get a cilantro plant (that may or may not be surviving). Fresh local produce dipped into fresh local produce mixed with spices, fresh herbs, and (now) delicious chicken sausage? HECK YES.
Flavor, nutrition, and ease of creation are my criteria for recipes. This guacamole delivers on all counts! All you need are a few key ingredients and a grill pan for the sausages, and you are ready to go. We paired our BBQ Chicken Sausage Guacamole with salt and pepper ridge cut chips and veggies, and I may or may not have made myself another of my personal bowls, lol. Ready to dig in?
- 1 ripe avocado
- 1 al fresco Sweet & Smoky BBQ Chicken Sausage (diced)
- 1/4 cup fresh tomato (diced)
- 1/4 cup raw onion (diced)
- 1 tbsp raw jalapeno (diced)--optional
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp red pepper flake
- salt and pepper (ground to taste)
- 1 tbsp lime juice
- 2 sprigs of fresh cilantro, leaves pulled and chopped (or 1-2 tsp dried cilantro)
- optional hot sauce
- Heat saute pan to medium. Add onion and jalapeno to pan and season.
- Scoop the avocado flesh into a bowl and mash to desired consistency.
- Stir veggies and add chicken sausage to pan.
- Add spices and lime juice to avocado mash and stir to incorporate.
- Stir veggies and chicken sausage until heated through, then transfer to separate bowl to cool.
- After a few minutes of cooling, add veggies, diced sausage, and salt and pepper to avocado mixture and fold over.
- Add fresh cilantro and gently combine. Finish with lime and serve with chips or veggies or spread on whatever you desire!

As ever, I have to thank you all so much for the outpouring of love from my post on Tuesday. As I go through this journey of life, I really am just going to keep it real with you. I am not depressed or anxious all the time–just like with my Crohn’s flares, I am not sick 100% of the time–but when these chronic conditions flare, they flare hard. I just hope that my sharing my story and stories as they come will help to bolster up someone else who is struggling by knowing that these days, these weeks, these moments–they happen to everyone. Depression doesn’t care whether you are in the best stage of your life or the worst. All it takes is the right trigger.
