Yesterday, I had to fast for my Thryoid and Nutrient Panel tests for my Clinical Nutritionist that I mentioned on Monday. Which of course got food on my mind (who am I kidding, when is it not?). I created these Peach Basil Protein Crepes during Alex’s and my spring vacation to the Outer Banks. I love fresh basil in anything; I’m from Georgia so you know how I feel about peaches, and a Greek Yogurt filling inside the protein-packed crepe balances out the sweetness and herbs in a perfectly refreshing way.

I can’t believe it took me so long to post my recipe for my Copycat Trader Joe’s Vegan Chorizo (Soyrizo). But I quickly realized that I hadn’t given it proper mention when I posted my Vegan Chorizo Pumpkin Quesadillas as part of Pumpkin Week and so many people asked after the recipe! What I love about making my own Vegan Chorizo is that I can make exactly as much as I want and exactly to my tastes and recipes.
