Friday Catch Up 7/28 + Cheesy Summer Squash Fritters (Gluten Free)

Another Friday, another Friday Catch Up and another recipe for Easy Cheesy Summer Squash Fritters! Perfect for those of us who need CSA recipe ideas.

Let’s start with the Friday Catch Up before we get to the Cheesy Summer Squash Fritters recipe

It was kind of a big week… Posts You Might Have Missed:

And now for the RANDOM:

1) I have enjoyed my time with Class Pass so much (all the reformer Pilates) that I grabbed the 3 class extension for my 5 class pack! The only sadface about it is that I am going to cancel my plan after using those. Reformer Pilates, especially the kinds that I am doing, won’t be that great of an idea as my belly continues to grow, so I am going to put myself up to investigating online prenatal Pilates videos. Any suggestions would be great!

I might just do this instead.

2) I know I’ve talked about my lack of willpower when it comes to food before, but it has gotten REALLY bad, y’all. If it is a carb or hell, even around me and seemingly somewhat available, I will eat it. I am a food slut. Alex even got home early for dinner yesterday (as in, he got home in time for what should have been dinner time) but I had gone bonkers on staff meal at the restaurant (Chef made Cubans… I love bread and mustard and pickles and pork…) and was tapped out. Of course I still helped him with his pizza… and promptly overate (again) and felt like poo. I am the WORST.

Not from today, but still cute. My boobs are much bigger now.

Total aside, I wish you all could see how Ridley is sleeping right now. She is snuggled up against me, but upside down, with her front legs across me and her head on my foot. #ladylike

3) I guess ish is getting real. We have been given our first two baby books this week. And no, we still have not bought ANYTHING other than that onesie for our announcement that is in anyway remotely for the baby. I think because I am paranoid. Alex last night was talking about how we have to start getting things like a crib, and I was like HOLD YOUR HORSES WE HAVE MONTHS. I think I’ll feel better when we get past the anatomy exam. 6 long weeks to wait for that.

4) I promised to try to keep things not completely colored with pregnancy stuff, so…. I’m going to tell you that I am at wit’s end with my phone. I have a Samsung Galaxy S7, and in the past week, the battery has gone to literal $HI+. I might get 4 hours out of it, and it will turn itself off if the battery goes below 20%. Has this happened to anyone else? What did you do? Should I buy a power pack for it? I need to figure this out before Empower Race Weekend!

5) Ok, recipe time! This is another super easy recipe that is a major crowd pleaser. If you like summer squash. Which as of the moment, I cannot be around after 3 PM. Will explain that later.

Easy Cheesy Summer Squash Fritters (Gluten Free)

These gluten free easy cheesy summer squahs fritters are delicious, healthy, and adaptable to your favorite flavors. The perfect summer side to use up your CSA summer produce! A total crowd pleaser! @suzlyfe

This was my solution of what to do with the admittedly beautiful summer squash that we received in our CSA box a few weeks ago. For more ideas of what to do with CSA produce, check out this post! 

I knew that I would like the more paired down and simple Easy Zucchini Fritters that I had created, but I also knew that Alex would want something a bit heartier. Furthermore, as there was no way I would be eating these, I also knew I could have fun with the ingredients! So I loaded them up with zesty Monterey Jack cheese and played with the flours a little bit, and the end result was fantastic! And yes, that is a man saying that.

Easy Cheesy Summer Squash Fritters (Gluten Free)

Prep: Cook: Yield: 12+ frittersTotal:

These gluten free easy cheesy summer squahs fritters are delicious, healthy, and adaptable to your favorite flavors. The perfect summer side to use up your CSA summer produce! A total crowd pleaser!

You'll Need...

  • 1-2 summer squash, shredded
  • 3/4 cup gluten free cornmeal (about 100g)
  • 1/4 cup gluten free chickpea flour (about 30g)
  • 1 egg + 1/4-1/3 cup liquid egg whites OR 1/2 cup liquid egg whites
  • 1 TBSP gluten free grainy mustard
  • 1 cup shredded Monterrey Jack Cheese
  • Salt + Pepper to taste


  1. Combine all ingredients and mix thoroughly.* **
  2. Heat skillet to medium heat. When hot, coat with cooking spray or oil. Spoon out desired amount of fritter batter (I like mine about 2.5 in diameter) and press down to flatten to about 1/2-3/4 in thickness. Cover with pan top and let cook for 2-3 minutes, or until browned on the bottom and turning opaque throughout.
  3. Flip fritters, press down, recover, and continue cooking another 2 minutes.
  4. Remove, serve with desired dipping sauces, and enjoy!

Additional Notes

*You may need more or less liquid or flour(s) depending on the amount of zucchini and also the wetness of the zucchini. If you have freshly shredded zucchini that you haven't pressed the moisture out of, you may need more flour. Additionally, as the batter sets, more liquid will come out due to the salt. The result will still be delicious!
**Flavor Ideas:
Fresh herbs (dill, cilantro, rosemary, basil)
Garlic or garlic powder
Goddess dressing

Another great one to dip into ketchup. But that might be the pregnant me talking.

    I wish I could help on the phone front. My battery drives me crazy too (Samsung Note 5). I think they plan this somehow so that we’ll upgrade. Check your battery settings. Something may be running in the background that is draining the battery. If it started suddenly, it may be a new app that was just installed.

    I was on restricted activity for all my babies, so I’ve got Pilates advice for you But I will say this: those compression socks for running will come in handy in the 3rd trimester Oh and squash + fritters? You’re speaking my Southern love language.

    Pilatesology has a large selection of prenatal Pilates. I’ve never tried those videos but their other classes by some of the same instructors are fantastic. Have a great weekend!

    When your phone acts like that, it’s time to replace it.

    You need to be able to call Uber, you doctor, Alex, and since you don’t have a car or a land line– you and Yoshi(e) need a reliable way to contact people!

    Wait, you won’t be eating these? But they sound incredible! Love the ingredients. Cornmeal. Cheese. I love ‘Cs.’ (but wait, is summer squash just another name for zucchini?)

    Haha. I’m such a procrastinator/way too relaxed with some things, if I’m ever pregnant I will be totally buying/doing everything in the last like…. three weeks. So I’m really not good encouragement there. Your phone though. No. That is not normal or good. I think you just have a really bad malfunction and need to return it to your provider for a new one. That’s so so crappy.

      Oh – last minute thought – do you close down all your tabs and apps as you go? The more of you have open (I never close as I go so sometimes I go in and see I have like hundreds open)… this will drag down your battery a lot.

    These look good. I loved going to prenatal yoga classes, it’s what got me hooked on yoga! It’s also crazy the changes your body can make in 6 weeks, heck eBen a week when pregnant – all good of course!

    I love reformer pilates classes. I hope you find something online to follow. OK so I never had the Galaxy S7, but I had the S3 and S5 and honestly both died on me after a year. Battery was awful. My S3 killed itself when it did an update so I am sooo scared of updates now. It told me it deleted its own battery charge file…WHAT! I would definitely get a battery pack for events. I have one and it has been a lifesaver, but recently I converted to an iphone and have not had issues yet.

    Hey, I say your pregnancy gives you the license to enjoy those carbs (and whatever else) without feeling like you are the WORST. Your body knows what to do, and craves what it needs! I’ve tried the pilates reformer and loved it, but the instructor was bizarre, to say the least. I’d love to find another place, nearer to my home. I’m sure there are plenty of online videos you can find that you can do throughout your pregnancy. Good luck!

    mmmm…. those squash fritters sound yummy. And I love pilates so much; I hope you can find some great pre-natal pregnancy Pilates videos. 🙂 Still so happy and thanking God for this little baby. One family in our church just had their first child; she was such an answer to prayer. 🙂 Her name is Kathryn. New babies are such a blessing.

    My phone does the same thing, although I have an IPhone. I think the companies make them to last about a year or so, just so you want to buy a new one.

    How are you feeling, lady? The anatomy exam is definitely a great milestone, and I know it can seem like a long wait until then. If it makes you feel any better, we don’t have a crib set up yet, and I am 29 weeks ahahaha! But after my baby showers the next couple of weeks, we’ll be getting things together.     We didn’t buy anything for our babies until weeks before the due date. Because like you, I was paranoid. I also didn’t let myself get attached to either of them while they were in my belly — for the same reason.

    Pilates and walking were my primary forms of exercise when I was pregnant with my youngest. I had a great teacher who just kept modifying the classes for me so I could keep attending right up to a week before I delivered.

    Unfortunately it is pretty common for phone batteries to start dying after ~2 years. I learned this when mine died halfway across the country…so I had to get a new one before I drove back. But if I had been home my husband would have tried to replace the battery. This requires someone who is good at small fiddly repairs (not me) and also super voids the warranty if you have one. So yeah…probably about time for a new phone.

    Yay for fritters! I’ve never tried making em’ but I definitely love the sound of these! I had risotto fritters yesterday for lunch and they were pretty tasty, so I’ve kinda been in the mood for more!

    How old is your phone? My three year old iphone did this last year and I couldn’t go anywhere without carrying a powerbank around…. I finally bit the bullet and got a new phone in December. Using your phone a lot definitely will drain the battery over time. I have since tried to employ new strategies (like, not charging every night, if not necessary, always keeping battery between 20-80%, etc.)… not sure yet if that is going to work longterm, but it’s worth a try.
