Easy Balsamic Bolognese Ravioli (Gluten Free, Vegan Modifications)

Congrats to all who got into the NYC Marathon! I did not, but it’s ok–other plans are in the works!

Bolognese. One of the most traditional and beloved of Italian pasta dishes. But what happens when the concept is inverted–>What do you pair with a ravioli that is already stuffed with bolognese? Like, isn’t that technically a sauce already?

I was presented with this very quandary, and so I chose to get creative with it. Also, I went to Whole Foods for inspiration and a protein to pair with it and instead left with soup, popcorn, apples, and nut butter. Typical. #thestruggleisreal We had some marinara in the freezer, but I didn’t think that it would work well as it was. To further my issues, it was beef bolognese, so I felt a bit at an impasse with regards to proteins–do I add more meat? How do I bulk this up?

Thinking cap on, recipe development engaged #likeaSuz. So I present to you 2 version of the recipe that I made: one is the semi-homemade version as I made it, the second is how one could make it gluten free and vegan! Either way–everyone can enjoy my recipe for Balsamic Bolognese! Or deconstruct it and serve over top of spaghetti squash or other pasta!

Balsamic Bolognese Ravioli (can be Gluten Free, Vegan)

This is a fabulous change up on your typical bolognese by using a selection of store-bought and ready to go ingredients for a quick and satisfying dinner! Gluten Free and Vegan Modifications

Ingredients
  1. 1 box Trader Joe's Beef Bolognese Ravioli OR Vegan, Gluten Free Faux Bolognese Wonton Ravioli
  2. Parmesan OR Nutritional Yeast (as desired)
Veggies
  1. 1 cup cooked Sweet Potato, cubed
  2. 1/4 White Onion, chopped
  3. 2 medium Cremini (baby bella) mushrooms, sliced and halved
  4. 2 cloves Garlic, sliced
Sauce
  1. 1-2 cups Marinara Sauce (I used Trader Joe's Traditional Marinara)
  2. 2 Tbsp Balsamic Vinegar
  3. 1 Tbsp Worchestershire Sauce (GF)
  4. 1/4 cup Fresh Tomato, chopped
  5. Red Pepper Flakes, Basil
Instructions
  1. Cook sweet potatoes as desired (roast, boil, or microwave).
  2. Combine sauce ingredients in a small sauce pan. Bring to boil, reduce to simmer.
  3. Saute veggies in skillet. Season and add garlic and cooked sweet potato last. Toss and brown.
  4. Bring pot of salted water to boil and add ravioli. Cook as instructed (4-6 minutes), drain.
  5. Serve ravioli, veggies, and marinara, top with Parmesan!

Vegan, Gluten Free TVP "Faux" Bolognese
Serves 2
Vegan Gluten Free Faux Bolognese that is easy, extremely fast, and always delicious!

Ingredients
  1. **All Ingredients Gluten Free and Vegan**
  2. 1/3-1/2 cup Textured Vegetable Protein
  3. 1 Tbsp Balsamic Vinegar
  4. 1 Tbsp Worchestershire Sauce (GF)
  5. 2 tsp Garlic Powder
  6. 2 tsp dry Basil
  7. 1 tsp Thyme
  8. 1 tsp oregano
  9. 2/3-1 cup water (double the TVP amount)
Pasta Options
  1. Wonton Wrappers
  2. Desired Amount Spaghetti Squash
Instructions
  1. Cook TVP by combining all non-Wonton ingredients from Ravioli ingredients in a microwave safe bowl, stir, microwave for 3-4 minutes or until liquid is absorbed.
  2. Spoon TVP onto Wonton wrapper, moisten edges and either fold over onto the other or seal with a second wrapper. Make sure that the edges are SECURELY sealed.
  3. Or serve over spaghetti squash and top with nutritional yeast!
